What you should know...

Starch is a carbohydrate that consists only of glucose units linked by α-glycosidic bonds. It is also a plant polysaccharide that acts as an energy store in plants. In the human diet, starch is the main carbohydrate supplied with food.

Cellulose is a linear polysaccharide built from D-glucose units linked by β-1,4-glycosidic bonds. Thanks to the β linkage, long and stiff chains form parallel arrangements, connected by hydrogen bonds forming micelles.
