What you should know...
Fats are insoluble in water (they do not mix with water). In addition, they do not dissolve in polar solvents, whereas in nonpolar solvents they are readily soluble. Most fats are odorless. Fats occur in two states of matter: liquid and solid. In the case of solid fats, they have long carbon chains with saturated fatty acid residues, and liquids have unsaturated fatty acid residues or fatty acid residues with short carbon chains.
